Exercise Questions | Uncoordinated but eager

Hi Everyone,
I am a busy teacher who has started her fitness journey. My fiancee is an avid gym rat and health nut who has exposed me to a new world of working out. I have always been very mindful of eating healthy and leading a balanced lifestyle. However, I am quite uncoordinated physically. Not to be a whiner, but I have some joint issues and have experienced setbacks (knees and feet) due to years of competitive dance. Currently, I complete about 45 minutes on the elliptical about 5 days a week. I have tried programs (P90X, BeachBody) but I have found that I am unable to purposefully finish the workouts. Any suggestions on how i can boost my workout routine without further damaging myself?
