If your weight lifting routines aren't keeping you sweating the whole time, you could up the intensity to really burn the muscles and get them responding. Increase your number of sets while reducing the rest time between them. You can do variations of your current moves for the extra sets. You may lift less weight with a more strenuous routine, but your muscles will grow more quickly.
Every 3 - 4 weeks, I'll lay off the weights and do light cardio for a week. This allows my muscles to recover completely (read grow) from the beating I've been giving them. After this rest week, start again but do different moves for the same muscle groups in your weight lifting routines. This will keep your muscles stimulated and responding, avoiding plateau.
On the eating end, I eat tons of meat, eggs, fish and nuts to get a lot of protein. I eat high protein foods all day long and I eat an hour before going to bed. I specifically follow the paleolithic nutritional regimen. Check it out by searching paleolithic diet anywhere online.
I've been steadily gaining about 2-4 pounds per month this way.
I started in May '08 at 6' tall 160 lbs.
We're now in September '08 and I'm at 176 lbs. My body fat % seems to have stayed about the same throughout.
Hope this helps
